Hello fellow MOFO-ers! I had intended on doing a nice long blog post today about the wonders and joys of cashew cheese (cue trumpet fan-fare and confetti). But alas, moving got in the way, and what with packing, cleaning and working (again!) I’m now getting very close to running out of day.. I really do need to start writing these things earlier on!

Amazing onion rings – Healthy and delicious! Cooked & Raw options!
I have pretty mixed feelings about onion rings. Whilst I will agree that they are tasty.. traditional onion rings, in all their battered, fried glory.. just seem pretty.. gross.
Heavily processed, lacking in nutritional value, and high in fat..
If you make them yourself they will obviously be better.. but what if you could make them healthy?

The other day, I simply had no idea what to cook for dinner. Pasta came to mind, or perhaps rice? Served with some kind of sweet potato dish?

Pesto Spaghetti
I know, I know. I said that I would be posting this recipe the very day after I posted my Pesto recipe – But sometimes, life just gets in the way!
Saturday was spent at my fiancé’s mum’s house, with my fiance’s family. No laptops, barely any phone usage, simply spent relaxing in the garden and spending time together.
With a particularly fun game of hide and seek, in which I won one of the games (they had to give up!) by hiding in an abandoned tree-house 😛

Basil & Almond Pesto – And a birthday!
For as long as I can remember, I’ve always been The Birthday Fairy. (A bit confusing perhaps, seeing as though this is Pixie Produce, but hey, on Sunday’s I’m a Unicorn, and I’ve always been crazy about dragons – I’m a whole fairy-tale rolled into one)

Spring time is one of my favourite times of the year. It starts to warm up (so no more worrying about, is it going to snow today? Are we going to have another supermarket raid as everyone panic-buys 20 loaves of bread?) And it’s also not too hot that, with the exception of curling up inside your freezer, there’s nothing you can do to escape the heat (Something that I’ve only ever experienced since living in Devon. In Wales, such heat is just a myth!)
